Banana Chocolate Chip Pancakes

With our decision to change to a clean-eating/Paleo-style diet, it's always a treat to find recipes to replace some of the things we used to love, like pancakes! In fact, I think I love them more now than I used to.

There are many Paleo recipes for pancakes out there, but this one has become our favorite. Even our one and two-year-olds will eat 2-4 pancakes each! Just the kids and I alone can finish up an entire batch of them, so I usually double or triple the recipe, depending on how many adults are eating. It is a very simple recipe with basic ingredients (which for our diet, coconut and almond flours have become "basic"). I've always used almond meal instead of almond flour in this recipe, because it's so much cheaper and I can find it at my local Trader Joe's, whereas I would have to order almond flour online to get a good price. But if you have almond flour already, I'm sure they would be even better!

    I recently tried a very easy paleo friendly banana pancake recipe: mash 1 banana, add two scrambled eggs, mix, and cook in a lightly coconut oil greased skillet. I added chocolate chips to the kids' and left mine plain, and they all disappeared. Probably not as cakey as your recipe, but they were very simple, and everyone enjoyed them.

    1. Thanks for the comment Melissa! Amazing what you can do with such few ingredients! This is good to know for those days when I'm missing certain ingredients but want pancakes for breakfast. :)

    2. You're welcome! I'm enjoying my journey of introducing my family to paleo, so I'll probably check back often.
      I made them again this morning, this time for my mother-in-law and hubby as well. I added a little baking powder to the eggs and banana, and that helped the puff up a bit and gave them a cakier quality. The reviews were good!
